10 Easy RV & Campervan Meal Ideas for Busy Families: Kid-Approved + Minimal Prep and Ingredients
When you’re planning a family road trip in an RV or campervan, the idea of cooking on the road sounds cozy and budget-friendly. But then reality sets in: you’re working with a two-burner stove, a tiny fridge, limited counter space, and zero desire to spend your vacation washing a mountain of dishes in a tiny sink.
As a mom of three, my golden rule for camp cooking is simple: keep it quick, keep it kid-approved, and minimize the dishes.
You don’t need to be a gourmet chef to eat well on the road. After taking our family on a 10-day campervan road trip through the Pacific Northwest, we perfected the art of easy, low-prep van meals.

Here are 10 simple, crowd-pleasing campervan meal ideas you can whip up with minimal effort and ingredients, while still satisfying the whole family.
The Secret to Easy RV & Campervan Cooking
Before we dive into the recipes, here are three quick mom-hacks that will save your sanity in a small space:
- Prep at Home (or buy pre-prepped): Chop onions, brown your ground meats, or buy pre-shredded cheese before you leave. Pre-cut veggies in ziplock bags are a lifesaver. If you are unable to prep at home due to long travel or flying to your destination, buy as much pre-prepped food as you can! Pre-made meatballs, pre-cooked fajita chicken, pre-made hard boiled eggs, ect.
- Embrace One-Pan & Foil-Meal Recipes: The fewer pots you dirty, the faster you get back to sitting by the campfire. We preferred to use paper plates to help reduce the amount of dishes we dirtied.
- Keep Staple Seasonings in Baggies: Don’t drag your entire spice rack along, but you also need at least some basics. Mix your taco or fajita seasonings ahead, or buy pre-packaged packets from the store that don’t take up much space.
1. Easy Campfire Pita Pizzas
A DIY pizza station is sure to be a hit for the whole family, and using pita bread as the crust is a total game-changer for campervan cooking. Pitas are sturdy, warm quickly, and don’t get soggy like traditional dough.
- Ingredients: Pocket pitas, jarred pizza sauce, shredded mozzarella cheese, and your favorite toppings (pepperoni, olives, bell peppers).
- How to Make: Spread a spoonful of pizza sauce over a pita, load on cheese and toppings, and wrap loosely in foil. Cook over a campfire grate or in a covered skillet on your van stove for 5–7 minutes until the cheese is melted and the bottom is crispy.
- Mom Tip: Set up a “build-your-own” station on the picnic table so the kids can assemble their own!
2. 15-Minute Meatball Subs
This is one of our favorite “fast assembly” meals after a long day of exploring.
- Ingredients: Pre-cooked frozen meatballs (thawed in your van fridge) or pre-made raw meatballs that you can cook in your skillet or in foil over the fire, a jar of marinara sauce, hoagie rolls, and provolone or mozzarella.
- How to Make: Heat or cook the meatballs. Spoon 4–5 meatballs into each hoagie roll, top with a sauce and cheese, and toast the subs in a skillet or wrap them in foil near the fire until the cheese turns melty and the hoagie is crisp.

3. “Lasagna in a Bowl”
Craving comfort food without baking a 3-layer dish for an hour? This one-pot version gives you all the rich, cheesy flavors of traditional lasagna and is packed with protein.
- Ingredients: 1 lb ground beef or Italian sausage, 1 jar marinara sauce, pasta of your choice, cottage or ricotta cheese.
- How to Make: Brown the meat in your skillet and boil pasta until tender. Add marinara to meat and warm. In serving bowls, add pasta, meat/sauce mixture, and a few spoonfuls of ricotta or cottage cheese on top. Sprinkle with Italian seasoning.


4. Fajita Bowls
Fajita bowls are a fantastic campervan meal idea because they’re customizable, filling, and easy to scale up or down depending on how hungry your family is.
- Ingredients: Pre-cooked and shredded chicken, microwavable rice pouches, black beans, lettuce, limes + any additional topping.
- How to Make: Add the microwave rice pouch to a skillet with 1/2 cup water and warm until rice is soft. Then mix rice, beans and chicken in a bowl and top with whatever toppings you like.


5. Gourmet Grilled Ham & Cheese
Don’t underestimate the power of a classic elevated sandwich! Adding a few simple tweaks makes a standard grilled cheese feel like a hearty, satisfying dinner.
- Ingredients: Sourdough or thick white bread, deli ham or turket, sharp cheddar or Swiss cheese and butter or cooking spray.
- How to Make: Butter the outside of the bread slices, layer inside with ham & cheese. Grill in a cast-iron skillet over medium-low heat so the bread gets golden and crispy while the cheese melts through.
- Pairing: Serve with a box of pre-made tomato soup for the ultimate cozy rainy-day van dinner.
6. One-Pan Campfire Tacos
Tacos are a staple in our house, and they transition seamlessly to a campervan meal. You can use soft tortillas, hard shells, or even make “Walking Tacos” in individual chip bags for zero dish cleanup.
- Ingredients: 1 lb ground beef or turkey, beans of your choice, taco seasoning, tortillas (or individual Dorito/Frito bags), and taco toppings (shredded lettuce, cheese, sour cream, salsa).
- How to Make: Brown the meat in a skillet with taco seasoning. Assemble tacos or pour cooked taco meat directly into crushed chip bags for instant Walking Tacos.

- How to Make: Arrange everything on a large cutting board or a clean sheet pan placed in the middle of your picnic table.
- Why Families Love It: It feels like a fun snack party for the kids, takes 5 minutes to assemble, and requires zero cooking!
8. Grab-and-Go Breakfast Burritos
A hearty breakfast sets the tone for a full day of family adventure. You can make these fresh at camp or prep them at home, freeze them in foil, and reheat them right over the fire!
- Ingredients: Large flour tortillas, scrambled eggs, cooked breakfast sausage or bacon, and shredded cheddar.
- How to Make: Cook your eggs and breakfast meat in a skillet. Roll eggs, meat and cheese into tortillas. Wrap individual burritos in foil and heat them in a skillet or over camp coals until warm and crisp.
- Pro tip: Buy pre-cooked sausage to save time and effort! We love the Jimmy Dean crumbles.
9. One-Pot Campfire Chili & Cornbread
Chili is the king of campfire meals. It’s warm, filling, packed with protein, and tastes even better when eaten outside in the cool mountain air.
- Ingredients: 1 lb ground beef or turkey, 1 canned kidney beans (drained), 1 canned black beans (drained), 1 can diced tomatoes, 1 packet chili seasoning, and a box of pre-made cornbread muffin bites (or corn chips).
- How to Make: Brown the meat in a medium pot. Dump in the beans, diced tomatoes, and seasoning. Simmer for 15 minutes. Serve in bowls topped with shredded cheese, sour cream, and corn chips or cornbread on the side!
10. Fire Roasted Hot Dogs or Brats
A campfire classic, you can never go wrong roasting hot dogs over an open campfire. For a different flavor, try brats instead.
- Ingredients: Hot dogs or brats, buns, condiments, roasting stick
- How to Make: Pierce hot dogs or brats with the roasting stick and warm over the fire.
